Quatro Quesos Dos Fritos

It means "4 cheeses, twice fried"

And it doesn't travel well.


1. Boil 12 small round potatoes. When soft, remove then from the water and carefully scoop the insides of the potatoes.

2. Fill with 4 cheeses, which can be any kind. My recommendation is mozzarella, sharp cheddar, white cheddar, and feta.


Shave the potatoes and batter them with egg, flour, breadcrumbs, cayenne, and pepper.


Bake on 350 degrees for 10 minutes.
